Dharane Saag

I guess it's one of those delicacies of Dharan and I believe there are different versions to this dish, but let's roll with this one.

Makes 3-4 servings



Ingredients:
  • Pork bar - 2
  • Onions - 1/2 (sliced)
  • Tomatoes - 1/2 (diced)
  • Ginger/Garlic paste - 1 tbsp
  • Vegetable Oil - 1 tsp
  • Mustard Greens or any greens you want to saute'
  • Green chilies - 3
  • Salt, cumin powder, coriander powder, chili powder, turmeric powder to taste
  • Cilantro to garnish

First of all, you need to boil the pork bar similar to the Spicy Pork Belly recipe.

Once the water has been drained, cut into small slices.

In a skillet, add 1 tsp vegetable oil. Line up the pork belly/bar on the sides of the skillet so they are evenly cooked. Note that, pork belly contains a lot of fat.

Once the pork belly turns golden in color, add in onions. Stir well.


Add in tomatoes and all the spices.


Let it cook for 2-3 minutes until tomatoes blend in well.

Now add in the mustard greens and stir well. You can close with a lid so the greens are cooked as well.


Add in cilantro and dharane saag is ready!
