Introduction
Most people like tomato achar/pickle with rice, our daily staple food. Some have very simple recipes while some like to add radish, fish or any other vegetables to go along with. And, what without the spices...it sure will be bland! Today, I am going to share the recipe I like most and hope you will too!
Makes about 4 - 5 servings

Tomato Anchovy Achar |
Ingredients Needed
- Roma tomatoes: 3 (chopped)
- Yellow onion: 1 cup (diced/chopped)
- Ginger/Garlic: 2 tbsp (diced)
- Dried Anchovy: 1/2 cup
- Vegetable Oil: 2 tbsp (2)
- Salt, chili powder, turmeric powder, coriander and cumin powder to taste
- Garnish with Cilantro
- Cumin seeds: 1/2 tsp
- Water as needed
Steps to follow
In a non-stick skillet, heat 2 tbsp of vegetable oil on a medium heat.

Add dried anchovy and fry until it's crisp. Set aside.

In the same skillet, add additional 2 tbsp of vegetable oil. Add 1/2 tsp cumin seeds.

When it's dark in color, add 1 cup of diced yellow onions and fry until it's golden brown.

Add spices and mix well.

Add chopped tomatoes and mix well until all the spices blend well.

You can cover with a lid and cook for few minutes until the tomatoes are cooked. Please make sure that you stir occasionally.

Once it's all cooked, add water and then fried anchovies and 2 tbsp diced Ginger/Garlic.

Mix well |
Bring to a boil. Turn off the heat.
Garnish with cilantro.

Tomato Achar is now ready!
Note: As for my vegetarian friends, you could still enjoy this achar/pickle without dried anchovies/fish. Enjoy!
