Aloo Chana (Potato & Garbanzo Beans Curry)

Introduction

For all my vegetarian friends out there, there are so many possibilities if you are really looking for good source of protein in your diet, and especially varieties of beans has always proved to be a good source of protein. As a kid, I was never a fan of beans except for some. But growing up, I have tasted different cuisines and this has been one of favorites as it goes so well with rice or roti or even with chuira (beaten rice) or simply aloo chana. I have put together a list for this recipe and I'm sure you will love it!

Makes about 6 - 8 servings


Ingredients Needed

  • Unsoaked Garbanzo Beans - 1 cup
  • Potatoes - 1 large
  • Diced Red Onions - 1/4 cup
  • Diced Tomato - 1 small
  • Green Chillies - 1
  • Vegetable Oil - 1 tbsp
  • Fenugreek Seeds - 1/4 tsp
  • Salt, Cumin Poweder and Chili powder to taste
  • Ginger/Garlic Paste - 1 tbsp
  • Turmeric Powder for taste and color
  • Cilantro to garnish
  • Add water as needed
Optional: Add additional Green chilies if you like it hot.

Steps to follow

Soak Garbanzo beans overnight.

Wash the beans and drain the water.

In a saucepan, add the beans, water just to top off the beans, salt to taste and turmeric powder for color. Cook for 10 minutes in medium heat.

While the beans is cooking, skin the large potato and cut into halves as shown below. Accordingly, prepare ingredients for cooking. 
Dice the potatoes, tomatoes, onions, chilies and cilantro
Turn off the heat. Drain the water. Set aside.

In a pressure cooker, heat 1 tbsp vegetable oil. Add 1/4 tsp of fenugreek seeds. Let it turn dark in color. Add onions and then once it turn golden brown, add potatoes. Mix well.

Now add Chana (Garbanzo Beans) and mix well.

Now add spices along with ginger/garlic paste and mix well.
Add spices to taste

Add tomatoes. Let it cook for a minute or two and then add water as needed.

Cook until 2 whistles and turn off the heat. Open the lid, mix well and if you wish for a thicker look, let it boil for some time.

Add water and let it to boil

Sprinkle in some chopped green chilies and cilantro. When you add green chilies, it will provide aroma as well as flavorful taste to the dish.
