Badam Sadheko (Roasted Peanuts Salad)

Introduction

I am not really a peanut fan by nature and I hate peanut butter, but the recipe I am going to share is pretty tasty than I thought. And, trust me, this is very easy to make and goes with every occasion. Also, it has been one of the quick appetizer to go to for me at least, and I hope you will like it too! Try it and share your experiences.

Makes about 4 - 5 servings

Badam Sadheko (Roasted Peanuts Salad)

Ingredients Needed

  • Raw Peanuts: 1 cup
  • Red onion: 1/3 cup (chopped) 
  • Green chilies: 2 (diced)
  • Ginger: 1 tbsp (diced)
  • Garlic: 3-4 cloves (diced)
  • Mustard Oil: 1 tsp
  • Salt and chili powder to taste
Optional: Based upon how spicy you like, you can add green chilies and lemon.

Steps to follow

Heat pressure cooker to roast 1 cup Raw Peanuts on a medium heat for 3-4 minutes until you hear pop sound.

Once roasted as below, turn off the heat. Make sure it's not over-roasted.

If you have roasted peanuts, you may skip the above steps.

You will need to remove the shells of the peanuts by hand once it's cooled off. Throw away the shells and use the remaining to mix with the spices (1/3 cup chopped red onions, 1 tbsp diced ginger, 3-4 diced garlic cloves, 2 diced green chilies, salt, chili powder and unheated mustard oil)

Quick Note I would like to pass along: It is always better to mix the spices only when you are ready to serve so as to avoid sogginess and still taste fresh and crunchy. Enjoy!
